Our kitchen is the soul of Hacienda Soltepec; it's the greatest treasure we've
inherited from “La More”, who was the proprietress of our hotel until 2007.
We've created a variety of exquisite dishes from the typical elements of the Tlaxcalan
kitchen, such as: cactus, gusanos de maguey (mescal worm), escamoles (insect caviar),
huitlacoche (corn smut), wild mushrooms from la Malintzi (nearby mountain), pulque (alcoholic
beverage made from the mescal plant), mutton, pheasant, and much more.
You can enjoy an interesting variety of flavors; from seafood dishes like “Salmón Xalapasco” and
“Shrimp à la ollasca”, to fine cuts of meat such as our popular
“ Soltepec Filet” or our delicious “Tacos de Arrachera”
